Sick of pumpkin pie? This Thanksgiving, try Pumpkin Chocolate Chip Squares. These little bites of fall are sure to be a hit with your family and they are pretty easy to make. Before starting this recipe, make sure to ask your parent’s permission to use the oven, unless you are an independent chef. You will need…2 cups flour1 Tbl. Pumpkin pie spice1 tsp. Baking soda¾ tsp. salt2 sticks unsalted butter1 ¼ cup sugar1 egg2 tsp. vanilla extract1 cup canned pumpkin puree1 ¾ cup chocolate chips (more or less is ok)Nonstick cooking sprayPreheat your oven to 350 and line a 13″ by 9″ pan with foil. Make sure the foil goes over the top of the sides a little bit and spray with non-stick cooking spray. Whisk together the flour, the pumpkin pie spice, baking soda, and the salt in a bowl. Cream butter and sugar in a mixer and let it mix for about 5 minutes on a medium setting, scrape the sides of the bowl into the middle as needed. Then add the egg and the vanilla. Beat well. Don’t worry if the mixture looks curdled, it is supposed to. Then mix in the dry ingredients, 1/2 cup at a time.Take the batter out of the mixer and fold in chocolate chips using a spatula. Using a spoon, put the batter into a pan. Spread the batter with floured hands evenly. Bake in the oven for about 35 minutes until the edges of the batter pull away from the sides. Take the cookies out of the oven, let cool, cut into squares, and enjoy!Thanks to my mom’s friend Sheila for this recipe.
